Empress Roll Call!

I am going with my buddy at SM North for an external drive then suddenly felt stomach twitch in front of Dimsum Break near the escalator's landing. Surprisingly, we seemed in a haste entering the store noticing simple interiors that surely makes you feel cozy. A man in the entrance waving the menu is actually the reason, in addition to hunger, why we chose to eat there. The cheap amount of food which corresponds to every variety it offers are somewhat new to us. Maybe because we're not into Chinese food (and maybe, I am honing myself too to be a food blogger).

My friend ordered a beef Sate noodle together with his pot of steamed fried rice and a piece of Buchi while I have my beef spring rolls and yang chow fried rice matching iced tea for both of us. As we placed orders on our respective trays, I added this Empress Roll out of curiosity.



Sorry for the photo quality but it's actually green in color. Para sigurong lukso ng dugo because I just felt it's already a favorite. Sorry first time ko kumain nito. I can't tell what it is made of and I researched, it was either pork pigue or shrimp that I tasted. You can try it and go there. Swear, sulit ang bayad!

Ingredients:

1/2 kl Pork Kasim with out skin(chopped)
1/2 kl Shrimp(deviened and chopped)
1 tbsp Salt
1/2 tbsp Sugar
1 tbsp chicken Powder
1 tbsp Sesame Oil
1 tbsp Onions(chopped)
3 tbsps Cornstarch
1 pc Egg(scrambled)
1 pc big Petchay, blanched

1. Mix all the Ingredients except for the petchay, mix well.
2. Get a spoonful of the mixture, put and roll inside the blanched petchay, folding the sides in the middle before rolling it to full.
3. Boil water in a pan, season with salt, pepper, pour in the cornstartch mixture(cornstarch in water), stir in the scrambled egg, add a couple drops of sesame oil. Simmer.
4. Slowly put in the rolled Empress Roll to the Pan, cook for 10 minutes.

Lately, I've been dramatically craving for something that'll help me gain weight. I were able to set own meals for my program and found out that it's not just protein and carbohydrates I shall take. In fact, it made me conscious of the amount of fibers and calories per serving that I eat. It's also a must that I take into consideration the amount of salt and sugar. But what's challenging is to filter in nutrients your body lacks. I came into this kind of dessert and researched what benefit it could have!

At first, one thing that put interest and puzzled me is "Is cheesecake a torte, a custard or a slice of a cake or pie? Well, on my research, its says it depends! It is still under debate. Who cares? All I care is its taste. Like this Desired Cheesecake I've tried.

Generally, cheesecake is a combination of a thick layer of custard-like sweet made out of fresh cheese, egg and sugar and a crunchy base crust from crushed cookies or soft pastries. Lastly, I'm looking forward I could taste all its kind per region as it differs from tasters. Varieties of american, european and african cheesecakes is somewhat drooling for me (eeeh) as I've already encounter numbers of asian-style which is less sugar, fruity flavored in a spongy texture. Chicken Madeira with Fresh Mushroom

At Luxent Hotel in Quezon City, we held an event for a software in engineering and construction industry called Tekla Structures. As it launches it's 21st version, edible food and beverages awaits guests. Being somewhat a host, I need to eat earlier than the usual. All this time during my hosting in the said event, I always prefer not to eat not because I like the food but because I just don't want to. I asked for a plate  and they served Chicken Madeira with Fresh Mushrooms along with Buttered Vegetable in Season and Tepanyaki Rice.



The taste of the Portuguese wine, if I am not mistaken, gives the thrill on the dish. By chance that I am not fond of eating chicken that much, it savored the way it should. And poof! I'm full.

Bopiz ala Teresita

It is an awesome day packed with office workloads. Good thing I've got a lunch ready from the space that my tita Cita snatched in the bag to give me good set of a meal or two. The aroma turns on my happy tummy even i just ate my brunch for today!

Menu

Bopiz (or Bopis in Filipino) is a dish made out of pork/beef's lungs and heart. It is usually served with rice, at times as a main dish. It is also best served as pulutan or an appetizer while drinking alcohol. Bopis has different varieties depending on local cuisines but still, I proudly present my aunt Cita's specialty. Having the ingredients very odd for some kitchen masters away from the far east, it surprisingly offers an extraordinary tang you can't resist after simple procedures and method of preparations.




Ingredients:



1/2 kilo pork/beef lungs, diced
1/2 kilo pork/beef heart, diced
2 medium size red onions, minced
1 garlic head, minced
5 medium size red bell peppers, diced
2 medium size white radish, minced
1 tbsp black pepper
1 tbsp siling labuyo
2 tsp rock salt
2 cups vinegar
1/4 cup vegetable oil

Procedures:


1. In a large pan or pot, cover the beef/pork heart and lungs with water and boil for 30 minutes (or until the meat is tender enough to be diced.)
2. Drain lungs and heart from pot, let it cool down and dice it.
3. While cooling down the lungs and heart, prepare other ingredients for mincing and dicing. Set aside.
4. In a large pan or pot, heat oil, saute garlic, onions and red bellpepper.
5. Add the pork/beef diced heart and lungs. Stir fry for 3 minutes then put next radish.
6. Season it with rock salt and ground blackpepper. Continue sauteing until the sauce thickened in meat's own fat.
7. Pour the cups of vinegar without stirring. Add water to lessen sourness or add vinegar if you want more. Simmer for 2 minutes.
8. Serve in a plate with rice or an ice cold beer.
